The results showed that amount of moisture and crude protein in Asian sea bass was significantly higher than three other species (p<0.05). But, the amount of crude fat and ash in common carp was significantly higher than other species (p <0.05). The amount of essensial and nonessensial amini acids showed a significant difference (p<0.05). Based on the results, ΣEAA and ΣNEAA in the O. mykiss was significantly higher than the three other species (p <0.05). The proportion of ΣEAA to ΣNEAA showed a significant difference among four species (p<0.05). The highest of proportion of ΣEAA to ΣNEAA was observed in Nile Tilapia and the lowest of ΣEAA/ ΣNEAA was recorded in Common carp. In conclusion, it seems that Asian sea bass and Rainbow trout have a higher nutritional value for consumers than common carp and Nile Tilapia.}, keywords = {Asian Sea Bass,Rainbow trout,Common carp,Nile tilapia,Proximate composition,Amino acids profile,nutritional value}, title_fa = {بررسی ارزش تغذیه ای و پروفایل اسیدهای آمینه ماهی سی باس آسیایی (lates calcarifer) پرورش یافته در قفس و مقایسه آن با ماهی های قزل آلای رنگین کمان ((Oncorynchus mykis، کپور معمولی (Cyprinus carpio) و تیلاپیای نیل (Oreochromis niloticus) پرورشی}, abstract_fa = {هدف از این مطالعه، مقایسه میزان ترکیبات شیمیایی (پروتئین، چربی و خاکستر)، مقدار خاکستر و تعیین پروفایل اسیدهای آمینه در چهار گونه ماهی (سی باس آسیایی، قزل آلای رنگین کمان، کپور معمولی و تیلاپیای نیل) بود. بررسی نتایج نشان داد که میزان رطوبت و پروتئین خام در ماهی سی باس آسیایی به طور معنی داری بالاتر از سه گونه دیگر بود (0/05>p). ولی میزان چربی خام و خاکستر در ماهی کپور معمولی به طور معنی داری بالاتر از سه گونه دیگر بود (0/05>p). اندازه گیری اسیدهای آمینه نیز اختلاف معنی داری در میزان اسیدهای آمینه ضروری و غیرضروری نشان داد (0/05>p). براساس نتایج به دست آمده مجموع اسیدهای آمینه ضروری و غیرضروری در ماهی قزل آلای رنگین کمان در مقایسه با سه گونه دیگر به طور معنی داری بالاتر بود (0/05>p). هم چنین اختلاف معنی داری نیز در نسبت اسیدهای آمینه ضروری (ΣEAA) به اسیدهای آمینه غیرضروری (ΣNEAA) بین هر چهار گونه مشاهده شد (0/05>p). بالاترین نسبت اسیدهای آمینه ضروری به غیرضروری در ماهی تیلاپیای نیل و کم ترین مقدار آن در ماهی کپور معمولی ثبت شد. در مجموع ترکیبات مغذی و پروفایل اسیدهای آمینه در بین ماهیان مورد مطالعه از تغییرات زیادی برخوردار بود. براساس نتایج به دست آمده به نظر می رسد ماهیان سی باس آسیایی و قزل آلای رنگین کمان از ارزش تغذیه ای به مراتب بالاتری در مقایسه با کپور معمولی و تیلاپیای نیل برخوردار هستند.}, keywords_fa = {سی باس آسیایی,قزل آلای رنگین کمان,کپور معمولی,تیلاپیای نیل,ترکیبات شمیایی لاشه,پروفایل اسیدهای آمینه,ارزش غذایی}, url = {https://jfisheries.ut.ac.ir/article_75492.html}, eprint = {https://jfisheries.ut.ac.ir/article_75492_a4add644c31c26a25b0a8b20d1afd527.pdf} }
