So, it is increasingly attractive to find out effective and nontoxic measures (e.g. use of natural antimicrobial agent) to delay microbial spoilage. Considering the high probability of Escherichia coli contamination of local fish, the present study aimed at investigating the effects of aqueous and ethanol extracts of pomegranate peel (Punica granatum) on the growth of Escherichia coli in minced common carp during refrigerator storage. The minced meat treated with different concentrations of water and ethanol extracts of pomegranate peel, and the sensory evaluation were performed. After determining the optimum concentration, the treated minced meat inoculated with 1×103cfu/g Escherichia coli. The treated samples packaged separately into sterilized bags and stored at (4±1) °C, then Counting the bacteria was performed at days 0, 1, 3, 6, 9 and 12 after storage in refrigerator. The results showed that treatment containing 20% ethanol extract significantly could eliminate the bacteria after the 24- hour period, then followed by 10, 12/5 and 15%. The aqueous extract antimicrobial activities showed a very weak role and the number of bacteria had a rising trend. The results of this study indicated that the aqueous and ethanol extracts of pomegranate peel at high concentrations, because of antibacterial, antioxidant and preservative properties, could play an important role in ensuring food safety and consumer play.}, keywords = {Aqueous and Ethanol Extracts,Punica granatum,Escherichia coli,Minced,Cyprinus carpio}, title_fa = {بررسی تأثیر عصاره های آبی و اتانولی پوست انار (Punica granatum) بر رشد باکتری اشریشیاکلی (Escherichia coli) تلقیح شده درگوشت چرخ شده کپور معمولی (Cyprinus carpio)}, abstract_fa = {ا امروزه استفاده از روشهای نوین نگهداری نظیر استفاده از ضدمیکروبها جایگاه ویژه ای در صنایع غذایی پیدا کرده اند. از طرف دیگر با توجه به نگرانی های موجود در مورد استفاده از نگهدارنده های شیمیایی و اثرات مضر احتمالی آنها گرایش به استفاده از نگهدارنده های طبیعی افزایش یافته است. با توجه به احتمال بالای آلودگی ماهیان پرورشی به باکتری اشریشیاکلی (Escherichia coli)، هدف تحقیق حاضر، بررسی استفاده از عصاره های آبی و اتانولی پوست انار (Punica granatum) جهت مهار رشد باکتری اشریشیاکلی در گوشت چرخ شده ماهی کپور معمولی است. پس از ارزیابی حسی گوشت چرخ شده کپور معمولی آغشته شده با عصاره های آبی و اتانولی پوست انار و تعیین غلظت بهینه، عصاره های آبی و اتانولی به گوشت چرخ شده تلقیح شده باcfu/g  103×1 باکتری اشریشیاکلی، اضافه شد. سپس تیمارها بسته بندی و در طول دوره آزمایش در دمای یخچال نگهداری شدند. شمارش باکتری در روزهای 0، 1، 3، 6، 9 و 12 صورت گرفت. طبق نتایج، عصاره اتانولی فعالیت ضدباکتری قابل توجهی داشت و غلظت 20 درصد با حذف باکتری در 24 ساعت اولیه، بیشترین تاثیر را داشت و غلظت های 10، 5/12 و 15 درصد در رده های بعدی قرار گرفتند. عصاره آبی فعالیت ضدمیکروبی بسیار ضعیفی داشته و در طی دوره آزمایش، باکتری روند رشد صعودی نشان داد. نتایج این تحقیق نشان داد که با افزایش غلظت عصاره های آبی و اتانولی پوست انار میزان فعالیت ضدمیکروبی و آنتی اکسیدانی نیز در گوشت چرخ شده تقویت می شود. فعالیت ضدمیکروبی و آنتی اکسیدانی بیشتری در عصاره اتانولی نسبت به عصاره آبی مشاهده شد. استفاده از عصاره های آبی و اتانولی پوست انار به دلیل خاصیت ضدباکتری، آنتی اکسیدانی و محافظتی که دارد می تواند نقش مهمی در نگهداری و تأمین سلامت مواد غذایی و همچنین مصرف کننده ایفا کند.}, keywords_fa = {عصاره آبی و اتانولی,پوست انار,اشریشیاکلی,گوشت چرخ شده کپور معمولی}, url = {https://jfisheries.ut.ac.ir/article_78269.html}, eprint = {https://jfisheries.ut.ac.ir/article_78269_ac06e03bf69d8d4ab97b0bee7b3b7ec9.pdf} }
