بررسی راندمان تولید، ترکیبات تقریبی و اسیدهای آمینه پودر دو گونه خیار دریایی Holothuria loeucospilataو Stihcopus hermani برای تولید کپسول

چکیده

در این پژوهش برخی از ترکیبات غذائی پودر دو گونه خیار دریائی Holothuria leucospilota, Stihcopus herrmanni شامل اسید های امینه، پروئتین، چربی، رطوبت، خاکستر مورد بمنظور تولیدکپسول مورد بررسی قرار گرفت. برای انجام پژوهش دوگونه خیار دریایئ از عمق 5 متری اطراف جزیره قشم از طریق عملیات غواصی جمع آوری و با استفاده از پودر یخ به آزمایشگاه منتقل گردید. نمونه های تهیه شده به آزمایشگاه بیوتکنولوژی پژوهشکده خلیج فارس و دریای عمان منتقل شدند. در آزمایشگاه خیارهای دریایی شستشو، طول و وزن آنها ثبت شد. نمونه ها پس از خارج کردن محتویات شکمی، برای مرحله اول به مدت 15-10 دقیقه درون آب مقطر با دمای 80-60 درجه سانتیگراد حرارت داده شد تا پخته شده و شکل لاستیکی به خود گرفتند سپس به مدت 3 روز در انکوباتور مدل INB500 با دمای 40 درجه سانتیگراد خشک گردیدند .پس از آن نمونه ها برای بار دوم در آب مقطر در حال جوشیدن به مدت 15-10 دقیقه قرار داده شدند و سپس از آب جوش خارج و در انکوباتور با دمای 45 درجه سانتیگراد به مدت 7 روز خشک بوسیله آسیاب پودر شدند. بازده تولید پودر، مقدار ترکیبات تقریبی و ترکیب اسید های امینه پودر خیارهای دریائی اندازه گیری شد. نتایج نشان دادکه بازده تولید پودر در دو گونه از 9- تا 5/10 درصد متغییر بوده است. همچنین هر دو گونه S. hermani و گونه H. leucospilota از پروتئین بالا (بیشتر از 30%) برخوردار هستند. از نظر اسید های امینه، اسپارتیک اسید در هردو گونه بیشترین مقدار بود. این مقدار در گونه S. hermani 28.5 و در گونه H. leucospilota 36.91 درصد بدست آمد. کمترین مقدار اسید امینه نیز در گونه S. hermani لیزین با 6.25% و در گونه H. leucospilota آرژنین با 13.43% میباشد.

Abstract
The aim of this study was to investigate the sea cucumber powder as producing edible capsule for human consumption. For achieving to this propose, two sea cucumber species ( Holothoria leucospilota, Stihcopus herrmanni ) were collected from 5 meter deep of sea water around Qusem Inland. The samples were transported using ice powder to Persian Gulf and Oman Sea Institute. Wight and length of samples were determined immediately after receiving to the biotechnology Lab. After that the samples gutted and cooked in 10- 15 min in boiling water and dried in the Oven in 40 C for 3 days. The dried samples were put in boiling water for 10-15 min for second time and dried for 7 days in 45 C°. The dried samples were powdered by using blender. Sea cucumber powder was capsulated using 500mg capsule. Yield powder, proximate and amino acid composition of the sea cucumber powder was determined. Results indicated that powder yield of the two species of sea cucumbers were varied from 9-10.5 percent of the wet weight. Both samples Holothuria loeucospilota, Stihcopus herrmanni had high protein (30- 32) percent of the dried powder, however the fat content was found very low. Eight and four amino acids were detected in S. herrmanni and H. loecospilota, respectively. Aspartic acid was the highest amounts of the amino acid in both of the samples. The least of the amino acids were Lysin and Arginine which found in S. herrmanni and Holothuria loeucospilata respectively.
