مقایسۀ پروفایل اسید چرب عضله و کبد در دو جنسیت نر و مادۀ ماهی خواجو (Schizothorax zarudnyi)

چکیده

این تحقیق به منظور بررسی پروفایل اسید چرب عضله و کبد ماهی خواجو در دو جنسیت نر و ماده انجام شد. تعداد 18 نوع اسید چرب از انواع اسیدهای چرب اشباع (Saturated fatty acids)، تک‌غیراشباعی (Mono-unsaturated fatty acids) و چندغیراشباعی (Poly-unsaturated fatty acids) در دو جنسیت نر و مادة ماهی خواجو شناسایی شدند. اسید پالمیتیک (C16:0)، اسید پالمیتولئیک (C16:1) و دوکوزاهگزاانوئیک اسید (C22:6) به ترتیب فراوان‌ترین اسیدهای چرب از گروه SFA، MUFA و PUFA در عضله و کبد ماهی بودند. تفاوت معنی‌داری در محتوای SFAs (با محتوای 44/35 و 42/35 گرم در 100 گرم اسید چرب به ترتیب در عضلة ماهی نر و ماده)، MUFAs (با محتوای 56/42 و 94/42) و PUFAs (با محتوای 00/22 و 68/21) به ترتیب در عضلة جنسیت نر و مادة ماهی خواجو ملاحظه نشد (05/0P>). محتوای اسیدهای چرب SFA، MUFA و PUFA در کبد ماهیان نر و ماده به ترتیب 51/34 و 04/37، 95/42 و 31/44 همچنین 55/22 و 62/18 بوده است. نسبت اسیدهای چرب خانوادة امگا-3 به اسیدهای چرب امگا-6 در گوشت و کبد جنسیت‌های نر و ماده ماهی خواجو به ترتیب 91/3، 99/2، 96/4 و 43/4 محاسبه شد.

Present study was conducted to find the variations in fatty acid profile between muscle and liver of male and female of Schizothorax zarudnyi. Totally, 18 fatty acids of saturated, mono-unsaturated and poly-unsaturated fatty acids were found in both male and female of S. zarudnyi. Palmitic acid (C16:0), palmitoleic acid (C16:1) and docosahexaenoic acid (C22:0) were the most abundant fatty acids of SFAs, MUFAs and PUFAs in fish muscle and liver, respectively. There were no significant differences in content of SFAs (with 33.44 and 35.42 g/100 g of total fatty acids in muscle of male and female, respectively), MUFAs (with 42.56 and 42.94) and PUFAs (with 22.00 and 21.68) between male and female of S. zarudnyi (P>0.05). The content of SFA, MUFA and PUFAs in liver of male and female of S. zarudnyi were 34.51 and 37.04, 42.95 and 44.31 and also 22.55 and 18.62, respectively. N-3/n-6 ratio in muscle and liver of male and female of S. zarudnyi was as 3.91, 2.99, 4.96 and 4.43, respectively.
